The show creators intentionally skipped forward a month because otherwise the episode would be about two newborn foals. Also known as a "flashforward".
And going with the original topic, a flashforward still could apply. We don't really know how long Twi has actually been in Ponyville. If the show creators went day by day that'd be quite boring. Clearly a scenery change was needed and that was what they went with.
Also, instead of thinking about the legitimacy, take a look at every other cartoon series or movie and you'll realize this is an extremely popular story telling tactic.

Okay, I have been out-bronied... :) I have only seen all the episodes once and a few of Season 1 a second time.
Perheaps nothing much happened during the spring and summer, so right to fall for a good story~

Or maybe the cameras they used to film it can't send their feed in Spring and Summer, hence the gap.
I don't over think when it comes to a cartoon, but it does leave some interesting background information like the Ed Edd and Eddy Purgatory. I don't think the creators thought about this and just put the episodes in a order that's somewhat follows the seasons.
