Hmm... Well, I would count anything that isn't supernatural as an animal. So in MLP universe, since magic is natural, really an animal (by my definition) is anything that is less intelligent than a Diamond Dog. The line between monster and animal is kinda vague no matter how you look at it though, considering the fact that any animal can be possesed, Compelled, or otherwise turned into something that is "more than" an animal. So anything with free will that is of less than Diamond Dog level intelligence is an animal, I guess. Though, if you disagree, I can just make it the way you put it. ^^
Anything not supernatural? Well, rather than argue about the intelligence of animals actually being fairly close to our level... I'll just leave it until it comes up. :derpe:

Can't read what we write that we know of. It's hard to learn the meanings of things when you can't understand a person's tone. Though, gorillas have been known to learn American Sign Language. Also, alligators can grunt through the ground and have conversations with other alligators that are distant. By about 4 miles at times. (Who would need cell phones if we could do that?) Plus, I've known rats who could count. Anyway, once it comes up!

I know it's not canon, but in Friendship is Dragons, one of Fluttershy's skills has to do with Nature and commanding animals. The only animal it doesn't work on is dragons because they're not native to Equestria. She rolled high enough against the manticor to get it to calm down.
