Well, an electrical current is passed through the heating elements, and the electrical resistance of said elements converts some of that electrical energy into heat energy, which is then absorbed by the bread. This heat energy facilitates a Maillard reaction within the bread, which in turn gives it it's toasty properties. And if you leave it in too long, It catches fire.
