It's an emdash. Hyphens are used to to connect words together like mother-in-law. Much like semicolons can be substituted for conjunctions, em dashes can somewhat replace parentheses. En dashes are for ranges, like 1-10. Edit: If you're not sure what to use, just don't. Stick to the simpler punctuation, while still making sure your ideas come across correctly.
