I like Mexican food. My grandmother could make some really good tamales back in the day. Her parents were from Mexico and Puerto Rico.
I did too. My mom taught Mission Friends which was a Wednesday church gathering for kids. She'd always made food from where ever the Missionary she was teaching about was at. I was forced to try all sorts of things. Never liked any of it. I tried most of it. Didn't like it. I get away with eating what ever I want. Yes, but I always had to hide my keys....just because you can eat them doesn't mean you should.
My daughter eating my keys reminds you of Tamales? You did try making them spicy to keep me from eating them. Yes but she didn't know that.
It was delicious, easier to make than I thought, but I've also been cooking a lot so maybe things are just seeming easier as I get better.
Render the fat out of guanciale or pancetta, bacon can work if you grab the thick cut. Put the almost fully cooked pasta in the bacon and stir it in the fat, Make a slurry out of eggs and parmesan and pecorino romano and put it on the pasta stir until the eggs become and emulsified sauce, add more cheese to thicken or add pasta water to thin until desired. Taste for seasoning.
I've watched some cooking videos on youtube and I wish there was more just showing you how to make it ones. The new thing is this vs that type of cook and it always just ends up being a battle of who can be more pretentious. I want to see the food, not your ego.
The most interesting thing I usually make are those Velveeta mac and cheese cups. I like to add pizza sauce, parmesean, and meatballs and/or pepperoni.
