Jambalaya, eh? Good stuff. What kind of sausage did you use? I've heard Andouille is hard to get up north.
I used smoked sausage! There is a place up here for awesome andouille but its like 50mins away from me. :(
Ouch. That's a long drive for sausage. Smoked sausage works just fine, but I usually add extra hot sauce to make up for the lack of spice.
