Because the holiday name is in hebrew, not english, as such the "spelling" in english is strictly pheonetical. Hannukah, hanukka, chanukah. All technically correct. I'm jewish, its how you say it, not how you spell it.
Now, now, dear. That's a horrible way to look at it. Spelling is very important. For example, I called you an animal in the first sentence, and you didn't even know it because I spelled it wrong.
