I think Rarity was once a human who was transported or reincarnated into the pony world. This would explain why she would be embarrassed about being seen changing in front of Spike (despite the logic pointed out by Applejack), it was a relapse into her human mindset. Usually she's pretty fine about but maybe something about the Gala brought her old human instincts back.
